Vadacurry / vadakari

Hubby is not a big fan of this vadakari-idli combination.So , i never used to make this before.Nowadays,I have again started to make this for my son. It makes a complete healthy meal for kids.While making for kids, you might want to cut down on green chillies.When it comes to idli, each of us has a rule- hubby is happy with¬† sambhar,son wants sugar and i want onlyyyyy chicken curry.But i think,it is a interesting change to eat idlis with vadacurry sometimes.I made it yesterday…nobody complained ūüôā

Ingredients

  1. Chana dal – 3/4 cup
  2. Fennel seeds – 1/4 teaspoon
  3. Mustard seeds – 1/2 teaspoon
  4. Cloves,cinnamon stick,bayleaf – 3,1,1 respectively
  5. Ginger – 1/2 inch
  6. Green chillies – 4
  7. Garlic cloves – 3
  8. Curry leaves – few
  9. Cilantro – few
  10. Tomatoes – 2
  11. Chilli powder – 1/2 teaspoon ( you can add more if you want)
  12. Turmeric powder – 1/4 teaspoon
  13. Salt – to taste
  14. Oil – 2 tablespoons

Method

  • Soak the chana dal in water for 2 hours.
  • Grind the soaked chana dal ,fennel seeds,salt in a mixer and make a batter.It should be like idli batter.
  • Make idlis out of the batter using idli cooker.Just steam it for 7 to 10 minutes like you make idlis and keep it aside.
  • Grind ginger,garlic and green chillies to a fine paste.Chop the onions.
  • Heat oil in pan.Add the mustard seeds,cinnamon ,cloves,bayleaf .when the mustard seeds splutter,add the chopped onion and curry leaves .
  • Saute the onion for few minutes and add the ginger-garlic-chilli paste.
  • Saute for few more minutes and add the chopped tomatoes.
  • When the tomatoes are well cooked, crumble the chana dhal idlis and add it to the tomatoes.
  • Add water,chilli powder,turmeric powder ,salt and mix well.
  • Mash it with a spoon for few seconds and add some more water.
  • Let it cook for 10 minutes.
  • Turn off the heat when the vadacurry becomes thick.
  • Garnish with cilantro.
  • Serve hot with idli or dosa.

Quick fix wrap and an award

I am not able¬† to come up with a better name for this dish.I made this with the things i had on hand. just threw in little bit of this and little bit of that.. got myself a delicious wrap :).i am definitely gonna make this again…

Ingredients

  1. Flour Tortilla
  2. Shredded Cabbage, carrots – 1 cup
  3. Sliced Onion  Р1/2 cup
  4. sliced Green pepper –¬† 1/2 cup
  5. Ginger-garlic paste – 1 teaspoon
  6. Rice wine vinegar – a splash
  7. Soy sauce –¬† 2 teaspoons
  8. Eggs – 3
  9. Cilantro – little
  10. pepper and salt – To season scrambled eggs.
  11. oil- 2 teaspoons

Method

  • Heat oil in a pan.Add the cabbage,carrots,pepper,onion,ginger-garlic paste and saute them for few minutes.
  • Add the vinegar and soy sauce.No need to add salt since soy sauce has enough sodium.keep it aside.
  • In the same pan, heat oil.Beat the eggs and add it to the pan.
  • scramble the eggs on a medium flame.season with salt and pepper.
  • Add cilantro to the eggs and mix well.
  • Toast the tortilla on both sides with some butter.
  • Place the tortilla on a plate.Top it with the veggie and scrambled eggs on one side of the tortilla.Roll the tortilla¬† to form a wrap.Tuck in the sides of tortilla as you roll it to avoid spilling.
  • Serve warm.

Veggie Sandwich

Ingredients

  1. Onion  Р1 small
  2. Shredded cabbage – 1 cup
  3. Shredded carrot – 1 cup
  4. Green Chillies – 2 to 3
  5. Ginger Garlic paste – 1/2 teaspoon
  6. Turmeric powder – A pinch
  7. Salt to taste
  8. bread slices
  9. Butter
  10. A teaspoon of oil

Method

  • Heat oil in a pan.Add the chopped green chillies and fry for few seconds.
  • Add the ginger garlic paste and fry till you get rid of the raw smell.
  • Add the chopped onion,cabbage,carrots,turmeric,salt and mix them well.
  • Sprinkle some water and cover it with a lid.
  • Cook for few minutes on a medium flame.Do not over cook the veggies.This may take abot 3 to 4 minutes.
  • spread butter on the bread and toast them in the tava until they are crispy on the outside.
  • To make sandwich,spread the veggies on the bottom slice.Top the sandwich with another slice of toasted bread .
  • Serve hot.

I usually make these sandwiches with whole wheat bread.I ran out of it today.You are seeing the same sandwich made with onion-poppy seeds burger bun in the picture.

Rava Kichadi / Sooji Kichadi

Ingredients

Rava – 1 and 1/2 cup

Onion medium- 1 (finely chopped)

Tomato – 2 (finely chopped)

Peas (frozen or fresh) – 1/2 Cup

Green Chillies – 3 (Slit length wise)

Ginger Garlic paste – 1 teaspoon

Turmeric powder – 1/2 teaspoon

Urad dhal – 1/2 tablespoon

Mustard Seeds – 1/2 teaspoon

Coriander Leaves (cilantro) – Handful (finely chopped)

Oil

Salt to taste

Method

1. Add about 3 tablespoons of oil to a hot pan and fry the rava till its light brown. Add oil generously as oil prevents the kichadi from being mushy.

2. Transfer the rava to a plate.Heat the same pan with a little oil.

3. Add mustard seeds,urad dhal ,green chillies and fry them.Now add the Ginger garlic paste and onions and saute them well for 3 mins.

4.Add the Chopped tomato,turmeric powder and cook them.

5. Add about 3 cups of water, salt and bring it to a boil.

6.Add the peas and rava when the water bubbles.Stir and mix it with out lumps.Cook till it’s done.
7. Garnish with coriander leaves.

Note – You can also add carrots, beans if you want.

Wheat Dosa -Method2

Wheat Flour – 2cups

Onion – 1 (medium size)

Mustard seeds – 1/2 teaspoon

Chana dhal -1 table spoon
urad dhal – 1 teaspoon

red chillies – 3 ( Add more for more heat)

Curry leaves

Ghee or oil

Salt to taste

Method

Add water and salt to the wheat flour.Mix it well without lumps.The batter should be lighter in consistency than idly batter.

Heat a teaspoon oil or ghee in a small pan .when it is hot add mustard seeds,chana dhal,urad dhal ,red chillies,curry leaves and onion.Saute for few minutes.

Add the onion mixture to the wheat batter and mix well.

For making dosa, Coat the pan with oil or ghee.when it hot, ladle some batter on to the pan and spread all over the pan using the back of the ladle.

Add some more oil around the edges of the dosa and cook for few mins.Turn the dosa and cook the other side for few more mins.

Serve it with tomato chutney.

It is actually a method than a recipe.You can make Sweet wheat dosas too using jaggery or sugar.When u make sweet wheat Dosa make sure you add enough ghee so that the dosa doesnt stick.The sugars caramalize quickly and have the tendency to stick to the tava.

For sweet wheat dosa,just add sugar to wheat flour.Use a non stick pan.
